Normally, the EOI doesn't check anything. It just takes your word for it when you place it online. HOWEVER, they do a brief check after it is accepted to confirm some things manually.

This looks like a special case. Perhaps you should consult the NZ Immigration. NZ Immigration support is not that good, so you can consult an agent if you can afford it. It's perhaps the best option.

That's very surprising. It's very UNLIKELY that that can happen. Consult the NZQA officer of yours and ask how this has happened. Your degree should at least span a period of 3 years and 6 semesters...

The general thing is that you get about a 3 month period to find a job after being granted the WTR and a further 9 month period AFTER landing in NZ from the date you do so to find a job in NZ.
