Do you know a way to work out which hotel it's going to be? I tried googling the brief descriptions but didn't find out anything.

A term is what schools use, so there are 4 terms of about 10 weeks each a year - the rest of the time is school holidays. C&K hours are 9am - 2:30pm and they do a 5-day fortnight as heldownunder...

C&K costs vary as each centre sets their own fees - this year I have paid approx. $550 per term (4 terms).

Yes, the taxes etc will certainly increase the price substantially but I doubt it would be anywhere near GBP1000 which might be the only other option.
