I understand the "quote" being subject to fluctuations but surely once you accept the quote and pay then how can they then charge more on top?

We only got the one quote and are using the company that dealt with our container at this end who we were happy with. Yes it is dearer, same as most things here.

Depends where you are moving from, Australia is the same voltage as U.K so you can just swap the plugs over. U.S.A is 110 volts so not as simple, you would need transformers for every appliance so...
