Re: What's for dinner?
My delusions are not exactly of grandeur but more of lost marbles ... despite having written myself a list with the itemised description 'Sunday Dinner' ; thus leaving myself a degree of spontaneity to get whatever I fancied. (Oops sorry, who am I trying to kid?) whatever was on special in the meat department at Pak n Save.
However, I forgot to look for anything remotely Sunday dinner related; so we're going very downmarket today and having toad-in-the-hole.

Re: What's for dinner?
Hope you're feeling better Did the pizza help?
We are having pizza tonight. All homemade, this is my third attempt and they are getting better each time, trial and error!
I have yet to determine the optimal dough thickness and have no idea how you make them circular without cutting round a plate. I've seen them throw the dough around to get the shape and thinness but I'm more likely to destroy the kitchen.
Vaguely rectangular pizzas with odd bits sticking out are fine

Try rolling the dough out into a circle. As long as it tastes good, does it matter what shape it is? No it doesn't

Re: What's for dinner?
I went a bit MKR today - salmon fillet baked with chilli sauce and ginger, baked kumara and coleslaw jazzed up with coriander and spring onions.
I expect the two bitchy ones would give me nil points due to lack of thought about the colour scheme.

Homemade pea and mint soup with shop bought ciabatta . Not made the soup before but it was delicious and sooooooo easy.

A bit better today thanks. Trip back to Blighty has made me realise how lonely & bored I am in NZ. I have a lot of lovely friends but they are always either at work or messing about on their boats or with their family at weekends. Just feeling sorry for myself. Hoping OH will get a new job elsewhere (Singapore/Dubai/Australia).

The circle thing didn't work, it turned into an ovoid circular rectangle with bulges out the sides. Had a kind of rustic charm.
I also needed to make the dough thinner but it tasted good. Rolling it out is like trying to get a stubborn cat into a box-it just keeps wriggling its way back to where it wants to be.
Oh well, at least he was impressed

Having the Pea & mint soup again tonight, followed by homemade rice pud. It's comfort food season.

Re: What's for dinner?
And we're having fish pie and baked beans - also comfort food! Quite tempted to go carb-mental and do a rice pudding too, seeing as it's friday n'all. How do you do yours, Vital? I bake it with part milk, part condensed milk and about half a nutmeg grated on top. Sometimes I do the pan method with egg (Edmond's style) which dh likes more cos it's like UK tinned rice pud, but I prefer the baked one with crispy edges ... delish!
