Bevs I once got very lazy an whilst pushing her trundler around Countdown spied a 185g jar of Just Chilli Crushed Chilli that I keep in the fridge. Great for a tea spoon plopped in, stews, casseroles, chilli CC, spag bol sauce, mince for tatties, well just about everything for your Hubby really you can mix his separately before plating.

I concur - dried crushed chilis are the way forward. You can literally just take your portion out the pot and then add chilis. Both my kids finally enjoy reasonably spicy food (little one has to have a glass of milk alongside) but spicing it up after serving for them was what I did for years. I buy them by the massive bag load from our veg shop as it also stocks all manner of spices and pulses, etc., for very cheap - I bought some when we arrived back in August for less than $2 and they are so fire-hot we still have 9/10 the bag left

I like prosecco, if that gets me off the hook. I also like Pimms, and sometimes I like Pinot Gris if it is very chilled and it is sort of early evening (ie not after 9pm), I have already had dinner and a bath, and I'm not going anywhere - and it is not humid. Under those conditions it seems quite pleasant.

yesterday we were in Wanaka and went to Relishescafe and I had lovely duck dinner followed by the best ever cheese cake. MrF had squid starter and was so blown away by the sauce he got the recipe from the chef

Okey dokey. I am partly using a curry mix so not sure if you can get this one. It seems to come from Oz though so maybe you can get it.
BB's Fake Thai Curry (for 2 people)
2 or 3 teaspoons of The Gourmet Collection Thai Style Green Curry*
salt
bunch of coriander leaf
some chopped lemon grass (or you can get little jars of the stuff)
little bit of vegetable oil or any light oil
small carton 200ml of trim coconut milk
selection of green veggies (green bell pepper chopped, greens, peas, whatever you fancy)
some fish pieces or whatever you like (prawns, squid, or maybe some cooked chicken)
Saute the lemon grass and green pepper (if using) in the oil for a few minutes.
Add the curry powder, then the coconut milk. You may need a bit of extra water if too thick.
I used some Dory pieces last night and gave them 10 minutes in the mixture. Greens will need about 7 or 8 minutes in the mixture. Uncooked prawns about 8 minutes.
That is that. Easy peasy.

Ehrm.....only Mr BEVS will know how spicy he likes his curry. So you can either sprinkle some dried chilli powder in on his plate and mix well. Or maybe buy some Thai chilli sauce or other chilli sauce (Tabasco) and plop in whatever you fancy.

If you cannot get this curry mix, the main ingredients seem to be:
garlic, soy bean, lemongrass, celery seed, chives, chilli (not much I think), black pepper, fenugreek, cumin, salt. It's quite yellow in colour so I would be inclined to add a bit of turmeric maybe.

Nope used to live in South Shields for a while, my mothers home town. Stottie cakes from the baker across the road straight from the wall oven. Netty downstairs in the back yard. Remember well the constant coast fret and the sea frozen in the winter.
