It is I think more complicated than that. Certain areas which used to be well paid are no longer, Drywall come to mind. Back in the UK I worked with a couple of guys who bummed across the US and did some landscaping work in Boulder of all places, would not happen now.

Also bear in mind the wage is just start of the cost, all the add ons, and those here sans documents are less likely to not turn up if they have a good job.

That still sounds dubious. Another impact without a doubt is that many would lose their jobs, Those who were not laid off would find their work load increase accordingly. It's happened many times before

Of course, which proves that the whole deportation silliness is a farce. It will never happen. It's just red meat thrown at the base.

Mississippi passed anti undocumented immigrant legislation a year or so back...and all the immigrant farm labor left the state. Time for water melon picking machines then. No one picks cotton anymore. Big machines do it all

Obviously if labour costs more you need to factor that in, more preparation off site, menu changes, go with stuff that is less labour intensive, more care with scheduling etc.

From the customer perspective smaller tips so the total cost will not be that different.

They keep repeating themselves ad nauseum, it feels a bit tired and you wonder what purpose the debates now serve.

The only reason the problem exists is because no concerted effort to punish employers who hire undocumented workers has ever been seriously carried out. Hell there were and likely still are companies that use recruiters to advertise jobs to people in Mexico. The Cargill meat packing plant is one of the worst offenders.

Cotton does not bruise or break open. There are a vast number of fruits and vegetables that cannot be machine picked.
