Obviously your lack of a current UK licence is a major flaw in your plan to convert it.
Renewing your UK licence doesn't stand much chance of working since it will have a extremely recent renewal...

Yes, you have to be resident.
Most UK insurance will only cover you for 1 month abroad.
Plus, to get an MoT, the car needs to go back to UK, and without an MoT you can't get road tax.
