Coq-au-Champagne is a real thing, look it up. :-) Someone poured one glass out of a bottle of Martini Asti at the fashion show last night and left it on the bar with a shot glass over it. This morning I came in to work early, corked and fridged it and expect it to work as well as mediocre white wine. The bottle's worth 40c, I don't see a down side. Went and got some fresh parsley and celery and it's on.:D

Yes, I see it's Belgian. Funny folk the Belgians.

But I see your point about the 40 cent bottle of left over flat italian sparkly.

The idea of cooking in champagne seems very strange. Once you've boiled the bubbles out all you're left with is mediocre white wine, which you might as well start with in the first place.

I suppose your coq might appreciate the gesture though.

Can you not put a lid on the pot to keep the bubbles in?

It rather worries me to contemplate that you are dealing with machinery and sharp bits of stuff every day.

Absolutely! Great heavy iron Le Cruset slammer, and it's smelling good now... wicked, as you say. My home double-smoked bacon (not a lot, either) standing in for pancetta, but really standing out now it's all in the pot.
