I have a friend coming over for tea on Saturday....she always appreciates my cooking, so this is what I am cooking.....its sure to be a hit... Indian style pulled beef....very low maintenance, but wow!! Its probably the most tastiest dish I have ever cooked! I highly recommend it... even if your not a fan of Indian food as it is not curry before you enquire, just a very flavourful mix of beef herbs and spices! Soooooo good!!!

Chicken Parmesan; it's really good but I couldn't quite get through it - but there's enough for a nice late night snack. The other half-breast should probably get frozen.

With a few changes and substitutions (naturally) I used this basic recipe, only 400F instead of 450, and no flour, 2 eggs for 2 breast halves and double mopped them in the crumb and parmesan mixture

mmmmm....I like the look of that!! I would have probably ate it all even though I was already stuffed.....if it tastes as good as it looks! a full stomach wouldn't stop me!

Continuing the Sunday ‘roll’, I decided to try an altogether different dish, so went for Japanese this evening, with help from my old mate Masaharu Morimoto's book on mastering Japanese home cooking.

Saba No Misoni (mackerel simmered with miso), Ingen No Gomen Ae (haricots beans with a sesame dressing) and some good old sushi rice. It didn’t come out looking one bit like it did in the recipe book, but the taste was spot on. Plus I'm oozing health from every pore now.

It's actually very simple to make, the majority of time was spent reading then re-reading to make sure I hadn't screwed up.

OH gave it the thumbs up, so I asked if it would work for Sis-and-brother in law. OH said Sis yes, brother-in-law no, he only like fried fish...

YES! Zander here we come. ;)

We had Christmas dinner. Roast turkey. Absolutely perfect. Juicy and tasty.

I just realised, we forgot the crackers :(

I made a delectable spicy broth (lots of fresh ginger and garlic, sarachi, a little sweet thai chili sauce, half cup of vegetable stock (low sodium) and a cup of water with 1/4 of a teaspoon of low sodium soy - woohoo! then beansprouts, mushrooms, julienne carrots, snow peas, onion, green beans, and shrimp simmered briefly in it. Slurped like a soup, ate like a stir fry.. it was so good, I kept half the broth to make it again tomorrow :D

That sounds great! Reminded me of one colonoscopy prep and how I was starving, then remembered I was allowed broth! I made something like that with everything I had in the fridge then put it through a strainer and discarded the solids and drank the rest. Lifesaver!
Yesterday I was lazy and took a carton out of the freezing compartment - chili and toast for supper. Since I usually have a real breakfast I can skip one of the other meals if I have to and not miss it much. Tonight I predict tomato surprise.....

It'll be saganaki again, one of those slow/thawing/cooking down things. The inspiration was 1 lonely tomato I found at work, left over from a band rider. As the onions and garlic and olive oil all make friends I get into a little Ouzo to prime the appetite.

Do you do witchcraft? If you don't have any store medicine a drop of clove oil or a real clove set on it can provide temporary relief.
For this purpose I keep a vial of clove oil in my tackle box.

That sounds superb! I love making that kind of broth. Might also be good tomorrow if you drop some dumplings (gyoza) into it.

How do you get it on? (in a non Marvin Gaye way ;))

I tried some once. I don't think I got the right spot and the horrible taste took my mind off it.
