Just worked out that the fruit is litchi which leaves our chef ending in C

men enrolled = royal engineers = re (or res)
Leaving centtage or centstage. Course = stage, which leaves cen for college? Can't quite get it.

I put centre stage in eventually although I couldn,t really make it fit and then I twigged hardback.

The answer to the other is BARQUE.

Why is "firm uncovered rising damp chiefly" = rid?

Choirman or Choirboy (I think your E is wrong)
Gas = Chlorine, but I can't turn Chlorine into Choir...
