It could depend on where you want to stay. Downtown Halifax you might want to book to be on the safe side. Last year we toured the North and South shores in July and just found places on spec.

Hi. We came here for a holiday last year and went around the province. Decided that we wanted to be close to Halifax, airport, etc. Bedford looks ideal for us.

Creme Fraiche is sometimes available in Calgary Co-op. I've had the best success at the Dalhousie store. It's made by Liberty and is in the same section as sour cream.

Try an Italian food store. Lina's here in Calgary usually has tomato paste in a tube. Not much use to you in Regina, I know, but it might point you in the right direction.
