For type of diploma or certificate I just wrote "highers". It only asks for secondary and post-secondary education. Just give the years and what you acheived

Yes. Keep any joint bills, joint bank account statements and leases for properties for the year. Also, any holidays taken together and any flights taken to visit each other

I think the interviews are rare, unless they have a reason to believe the relationship isn't genuine, I guess. Not seen...
