This batch was +/- 180 gm each of feta and thawed frozen spinach (with as much water as possible squeezed out), a handful of chopped fresh mint, a small handful of chopped fresh thyme, a small onion finely chopped, a tablespoon of honey, a generous pinch of nutmeg, a few twists of black pepper and a beaten egg, chilled an hour or so. Then loaded into the pastry shells, brushed with beaten egg, 30 minutes @ 180 C, with another egg brushing 15 minutes in. That should yield 8-10 pasties; I only had one sheet of flaky in stock so did four and put the rest of the mix in the freezer. Given that they were babies rather than a 'slab' pie, I should probably have said spanakopitakia :o |

We'd been out all day yesterday and I didn't really feel like cooking. Husband took it on himself to go to the shop for something quick. He returned with a box of rigatoni and a jar of ricotta and tomato pasta bake sauce. It was a good idea, except I don't really like sauces in jars. So a bit of improvising, sauteed bacon, mushrooms, red peppers and cherry tomatoes, added the jar of sauce along with some sour cream and tomato puree. Poured that over the cooked pasta, sprinkled with a mix of pecorino and cheddar, and baked. Quick as and very tasty on a frosty winter night.

I had the leftover chicken thighs and fettuccine. Originally on Tuesday I was going to open a Knorr Sidekick Alfredo then changed my mind and put together a creamy sauce with tomatoes, onion and chives, oregano, wine, butter, half and half, and parmesan. The garlic and chili flake was already in the oil with the chicken. Payoff was that it was even better on day 2 and took only 6 min to heat up in the microwave.

I woke up feeling a bit meh with everything this morning for some odd reason. My bouce must've got nicked in the night.
So as MrBEVS just phoned for summat , he is instructed to bring home a shopping mall chinese takeaway for tea. The sort where you squash everything into the one container. Never saw that until we came to NZ. Takeaways are a bit hard to come by without quite a drive out so something of a treat really. Usually if we think to do this I take a previous container with me but that's not practical with him being 45 mins away and the mall being 30 mins from me . Lots of uses though for that. No cooking for me tonight. |
