That's exactly what I do, get as much air as you can out of the bag and if some of the meat is sticking above the water put a saucepan of water on top to weight it down.
Make sure you refrigerate it as soon as it's thawed, if you aren't cooking it straight away.

I put frozen meat in a heavy cast iron skillet, and it thaws out quicker than on the counter. There was a ribbed pan advertised on television years ago for thawing meat out fast, but when tested it worked no better than a cast skillet. I thaw kippers out in the sink.

My husband has invited people to dinner at the weekend...I presently have no kitchen as we've knocked the kitchen wall down and have plaster dust in every orifice....running away from home seems a sensible option.

My ex once started refitting (I.e. Demolished) my kitchen 2 days before overseas visitors arrived for Christmas/NY stay... I gave a 3 hour ultimatum for him to sort it out, or Else...
