I had some rather good fried fish today. The chips were bloody awful though

Most likely cod. An acceptable alternative when haddock is not available, IMO.

For fish and chips, cod isn't a bad alternative, it's better than pollock, though not by much.

For those considering fish as a healthy alternative to meat, deep-frying in batter isn't exactly the first thing you should be thinking about when you consider eating fish. This is not a trivial issue - America has a serious obesity problem and eating more fish (not deep-fried fish) would help address it.

My mum - who worked in a chippie 'up north' (northwest) for several years, first before I was born and again over 20 years later - said the type of fish offered standard changed over the years due to cost issues, so you probably need to qualify this discussion with time references.

I try and eat more fish. I grew up with fish on Fridays. I do the salmon plank on the grill thing, its about the only way i can eat salmon, seasoned with a little bit of butt rub. I'm also experimenting with my outdoor electric smoke house with various varieties of woods and mainly trout fish.
I enjoy crab and keep eye out for when Costco have king crab legs in.

I still need to bring myself to cook an live lobster. :o
