Exactly this.

I have never been into a fish shop in my ten+ years in Gloucester nor fifteen years in London and found haddock already cooked. I always ask for it, and am more than happy to wait, because further to Nutek's comment, the added benefit is that it is always freshly cooked.

The North starts at Watford Gap, in Northamptonshire.
