I will be making Christmas cake this year, bought my goodies from britishcornershop. Found it to be expensive after the pound to dollar conversion but worth it. I have branston pickle and robertson mincemeat in my cupboard, plus birds custard and silver balls for my trifle . I have a brilliant Delia recipe for the cake that I made last year for the first time, turned out very well.

As for the stuffing, last Thanksgiving I made my own from scratch and haven't looked back since. No suet included though, can't buy any of that down here. I suppose I make "dressing" rather than "stuffing" but it's bloody good I can assure you.

I love this time of year, it's cooling down, Halloween/Thanksgiving just round the corner then Christmas. Magic.

No - you put the water in (to about 3/4 way up pyrex). But slow cookers aren't designed to boil anything down so you don't get the same liquid loss (I didn't change the water once)

I used a standard pyrex bowl, covered with greaseproof and tied it (just like you would on a saucepan. I can't remember how long I put the slow cooker on for - mine has 4, 6, 8 and 10 hours. A google would advise you...(I'm in a hurry so can't do it - sorry). Main thing is - you can just leave it and go to work / sleep or whatever cos the water won't go down. Totally hassle free!

just put the crockpot on now! Made pudding yesterday as per delia instructions and its been sitting steeping overnight. Stuck in some ginger wine as i couldnt get barley wine so looking forward to taste it in 8 weeks!.

Were you looking in the wine section or the beer section? Lots of U.S. miscrobreweries do good barleywines (or similar). I know you've already made yours' (and I'm sure it will taste FAB!) - if anyone else is looking for Barleywine and needs to find a good beer stockist try searching on http://beeradvocate.com/

In slow cookers, I've found that if you leave the lid off for a bit things can thicken up and the liquid reduces :)

This will be the first year I've made a Christmas cake, since it was my mum who always made them when I was back in't UK :)

Not fond of the puddings at all.

Question:

Is alcohol the only reason that Cakes can be kept for so long before Christmas.

we have Marshalls here in Ohio too - (next state over to that poster) so maybe they are just local. they are a home goods type of store with the name Marshalls in big capital red letters as their sign. Ive seen no mention of Fields so Im guessing your thinking of another company.

FWIW, Marshall's is owned by TJ Maxx (TK Maxx in UK), and are similar to TJ's and TK's.

Never mind..I see I should have continued reading the thread before posting! doh!

This is my fave time of the year, making millions of mince pies and sausage rolls (though I am the only one that eats them all). Haven't attempted a christmas cake yet because I can't find marzipan or ground almonds.

As for the stuffing, that bit so easy I had my 11 year old make it last time.

delia recomends 'maturing' the pudding 6-8 weeks before you want to eat it. It can keep for quite a while afterwards (but can also be stuck in the freezer too).
