From the Wikipedia article on Colby cheese: ".... Colby is softer, moister, and milder than cheddar .... " so pretty much the crystallized essence of what is wrong with American cheese. :(

Do you not have cheddar cheese, or do you just not have good cheddar cheese?

Cheddar cheese in America, even imported cheddar cheese, is curiously rubbery. :(

I like a nice bit of blue cheddar that I sometimes find buried in the cheese drawer in our fridge.

I have never noticed that it causes flatulence. :unsure:
