Ok - I got mine from Woolies but it was definitely a gelatinous sort of consistency and not like the ham I'd had in the UK where it used to flake off when you cut it?? :)

No I'm not...the meat has that consistency/texture before I've cooked it and it doesn't go away with cooking (nor does it get any worse). Thanks for the vote of confidence re: my cooking skills!
