Default Ham / turkey like rubber??

Merry Crimbo to one and all!! Quick question though, where can you get a decent bit of ham and turkey that isn't like rubber?? Last Crimbo we bought a large turkey breast and you could've played basketball with it... ....this Crimbo we bought a large bit of ham and it's the same consistency?!?! Help please?? I'm fed up with meat that makes your jaws bounce apart!!

I went to a chinese restaurant and had some duck, it was awful..

I said to the chef your duck is rubbery.

He said:

FANKU MATE !

No I'm not...the meat has that consistency/texture before I've cooked it and it doesn't go away with cooking (nor does it get any worse). Thanks for the vote of confidence re: my cooking skills!

Ok - I got mine from Woolies but it was definitely a gelatinous sort of consistency and not like the ham I'd had in the UK where it used to flake off when you cut it??

I bought a cheapy frozen turkey breast from Safeway and it was gorgeous!!! not at all dry and a really lovely turkey taste

the ham here is vile, just learnt to live without it I did try to find a gammon joint to cook myself before xmas but they looked at me like i'd got 2 heads ..which is quite ironic in itself.

The only place I could find a gammon was in a british shop
