I can’t help with most of your questions but you can exchange your Canadian drivers license for a French one depending on which province issued it. Ontario licenses can be exchanged.

You're right of course. Perhaps I should have stated that they are as up to date as up to date dedicated sat navs. But... They are free and I have found them perfectly adequate for navigating around...

Don't buy a dedicated sat nav. I live in calgary. Both Google maps and apple maps on my iPhone do navigation, are always up to date and work great.

If you can connect an Apple TV box to your tv you can stream from any apple device including iPad, iPhone, laptop or desktop. More pricey than an AV connector but it is wireless.

Reading this thread reminds me of one of my first trips through France. We were driving from Paris through to Italy on the E60. Near Avallon we came up on a car travelling at about 120 km per hour....
