Today I had a three egg omelet with sausage bits, chopped country ham, mushrooms, red and green pepper, black olives, and tomato, folded over a blend of grated cheddar cheeses, and topped off with a squirt of Sriracha. :)

I am tired of porridge five days a week, which started when Mrs P was sent home by her office 8 weeks ago yesterday, so I have decided to go back to cooking an omlet at least a couple of days a week, plus weekends. .... But I discovered that we ate the last of the tomatoes yesterday. :( .... The new "two omlets between Monday and Friday" plan will be rolled out next week. :unsure:

I have porridge (so thick you can literally shape it into a cake and cut it with a knife) 4 times a week, with a little maple syrup; 2 days a week I have a 'moc scrambled' egg or hard boiled egg and once a week (usually on the weekend) I splurge and have a 2 egg omelette with spinach, peppers, onions, mushrooms and an ounce of plain goat cheese. :D

Today I had my first bacon in almost a year - 4 slices of Lou's back bacon in a sandwich (on white bread - another first, lol) - it was lovely.. next month I just might treat myself to a sausage sarni - that'll be a first in 2 years :D

That sounds a lot like mine, but I include peppers, usually green and red chopped peppers, and sliced black olives. I shall make one tomorrow, and will try to remember to upload a photo of it. I also usually put siracha on mine, or salsa, or sweet red chili sauce.

Breakfast today - 3 egg omlet with yellow and orange peppers (we were out of green), black olives, red onion, mushroom, tomato, chopped country ham, sausage crumbles, grated cheddar cheese, and a squirt of sriracha. :)

When I make the regular Neptune kippers I poach them in water and milk first to get a bunch of the salt out before I fry them; are these very salty? If not I'll recommend them to my sister, who has Save On nearby. I looked in the Regina Save On website and no Dundee kippers.

Oooh Kippers :tounge_smile: I do love a kipper. I can't find any in Fredericton...boil in the bag or otherwise...it's odd for a country with such a big coast but not a kipper in sight...or Smoked Haddock. Love smoked Haddock...we often have Smoked Mackerel now, not the same at all, but readily available.

Neptune boil in the bag buttered kipper fillets (170g). Sodium 850mg/170g or 5mg/g (contains milk)
Neptune regular kipper fillets (200g). Sodium 1500mg/200g or 7.5mg/g.
So the buttered boil in the bag have about 33% less salt.

I've never met a yellow fish I didn't like. Kippers and smoked haddock are two of my favourites. :)

Maybe it was horrible because it was poached in water? Fish should always be poached in milk, otherwise it gets hard and unpleasant. :nod:

I use some water and some half and half, and when I think it's right I take the fillets out, clean the pan, and fry them in butter. Neither hard or unpleasant.

Not hard, but I just remember the strong smell that stank the dining hall.

I use milk and a little butter. Not really sure if the butter makes a difference, it just seems right. :unsure:
