Oink, how do you kipper something, is that what cold smoking is? Can you kipper a trout...what does it taste like?

No, I rather thought I'd keep quiet about the differences in case the shop t that has the lowest price, puts them up. It's also why I don't buy more than two packets at a time. If I remember correctly from my economics studies, the secret to disequilibrium is imperfect information. :thumbup:

You need a really oily fish to get a good kipper as you salt the raw fish for a 12 or more hours before smoking. Basically, cold smoked fish doesn't get cooked in the process while hot smoking does. I'm not an expert but if it was me, I'd lightly hot smoke trout. The only reason we considered kippering the salmon is that we had so many we ended up giving fish away to passersby.

Could be the freshness of the fish, prominence of the stall or just discounting by the cheaper vendor to generate some revenue. It IS a market, after all.

Nevertheless, a good idea for Oink to keep schtum about it.

It's a massive tourist trap .. Most go for the most outlandish price they think they can get away with!

Last night I made really nice mashed potatoes with whipping cream and lots of fresh basil and coriander (I love coriander). This morning I put it in three Pyrex soup bowls and then put a couple of slices of mature cheadar on the top, microwaved it for five mins till piping hot and then put a lightly poached egg in the centre of each bowl....it was utterly delicious...my son looked at it very oddly, but it all disappeared.

Sounds delish! Although could do with a few sausages on the side. :)

I would of popped over for breakfast. Does your lad like the football because I would want to miss it.

You and Shard are on....I'm becoming a more adventurous cook in Canada:thumbup: and it was, actually, bloody wonderful....I can't pick you up from the airport though...freezing rain all the way!:thumbdown:

Kippers and scrambled eggs, toast, tomato. I'd swear the cat gave me a dirty look. Should have a beer before I brush my teeth.

I do love a good kipper myself!

Eggs Florentine for me, fresh spinach, smoked salmon, on a muffin, topped wth a lightly poached egg and hollandaise sauce. We have had this breakfast every Christmas and Easter Sunday for the last 20 years, never have it any other time and it's always delish...
