How did it work out ? the biggest problem we had was finding pork fat, I think 20% at least is needed. We used natural skins. The other thing used in the UK is rusk which is a filler, some cookbooks say you can make your own with breadcrumbs but it is not the same as the real rusk used by sausage makers. Beef fat is freely avaiable except in hunting season but personally I do not care for the taste in a pork sausage.

Walls are really only student fodder, a couple squid for a huge bag...they're alright on the grill, but with all things mass produced, nothing that special....though they would go down a treat right about now compared to Jimmy Deans over here

Ask in a butchers for pork fat? Especially if you've got a Spanish/Brazilian population...

Rusk, get that online...Amazon, not cheap over here though.

http://www.sausagemaking.org/ might have better suggestions there though.

Just to put my two pennies worth in, I think the sausages here are all crap. I don't want sweet italian, spicy italian bla bla bla!!!! I want a decent pork or beef link - I mean - how bloody hard is it. I even thought I'd make my own pork round sausages like you can get back home, but even the sausagement is total crap . Bought some in our local UK shop and they were ok but they are made in NY!!!! and they were $8 for a pack, so I've given up, unless anyone knows anywhere in CT that there are decent ones

ooops! Me and my big mouth

I did enjoy the Italian sausages but, obviously not as something to eat for breakfast, but great for some pasta sauces and make a great stuffing for baricole.

Wholefoods near by? They do good breakfast sausages, pricey though...

+1 on Whole Foods, Trader Joe's has some decent Bratwurst too, but then again I'm not that keen on most standard UK sausages. Something do with me being German an' all that, the sausage taste is a little different.

The Costco brats seem to be pretty good, but we've never dared buy that big a pack.

I'd avoid Chicken sausage, though, no matter where you get it from.

In the Richmond area pork fat is hard to come by as the modern pigs are very lean. We have asked local supermarkets / Sams Club etc and they tell us the sausage makers take all they can. The only way we found to get decent pork for sausage making was to buy a whole pig and have it procesed and coarse ground

If you're up in Maine, I know a place that do some fantastic chicken sausages...and Trader Joes, the spicy pepper ones they do are pretty lovely...but yeah, not quite sure what the fascination of chicken sausages is all about.

What about belly salt pork?

Sure you'd need to soak the hell out of it to get rid of all that salt and brine, but that might work?

Or is that a Brazilian thing again?

I'm with you..there's no such thing as a decent sausage in the US,l've tried several of the so called British Bangers that they sell over here...all utter garbage and Brats are no substitute either. I've given up hope of finding any decent sausages over here....give me the "Bland British sausage" anyday !!!!!
