Once I slice it i'll break it into smaller packs amd freeze. It looks a lot but most of it will go in the top freezer and the other bits (diced, fillet etc) are there frozen now.

Once you find a butcher, it should be easy to buy the pork you need because NC is a barbecue state where pig pickings are popular (have you been to one yet?).
thank you!...I honestly thought it would be easier here to buy any part of the pig due to the amount of barbecue they eat..so I'm keeping my fingers crossed.

unfortunately I haven't been to a pig pickings yet, I've heard about them though and it does sound delicious..

Man you are busy, good for you in doing it. Actually bacon is about the only thing I can get here, now its sausages with me. And like both I am too lazy and just want to buy them already prepped.
