The only advice I think might be relevant to the whole situation, apart from endorsing the rent for a while before buying anything, is that if I could afford, say, 200,000 Euros - I wouldn't buy a place for that and thus put all my money into that one place. I'd cut it down by maybe a third or so and see what is available for that price - leaving me with a bit of a cushion.

your private plate is its UK registration number. You can keep that on "retention" but you wont be able to display it on the car in spain. You can import a car at any point in life, but in order to avoid paying the "import tax" on it, the process needs to be started within 90 days so that it classes as a "personal import" and part of your "belongings".
