BTW: I seem to remember (before the talk of hand cuffs) that you mentioned you got the car scenario sorted for when you move.
If it's a hire car make sure you keep the paperwork with you in the car as it will have all the insurance documents etc.
A recent incident on here meant that someone didn't have the right paperwork (or thought not to be the right paperwork) when he was stopped for speeding and got extra fine for it.

I'd suggest having photocopies of your documents (passports, drivers licence etc.) You can get a spanish SIM for your mobile in the UK. Might be worth having, so you can give people your spanish number before you go.

Make sure that your phone is unlocked allowing a Spanish sim to be used, or wait until you arrive and buy one with a phone here. They start around €35 with credit on them already.
Also your EHIC( health card) and an E106 form from the Dept of Work and Pensions in Newcastle, to cover you and your family for healthcare.
