Not strictly the case (although the effect is the same) as long as the vehicle is street-legal in its country of registration then it can remain as long as it likes, bearing in mind that it would need to return annually to the UK for its MOT. However once you become a Spanish resident it will be illegal to drive a foreign registered vehicle - so to continue driving the vehicle legally you will need to re register it - and like I said, in practical terms it amounts to the same, but for different reason. As long as you remain a non - resident you can drive it.

Out of interest, we have just returned from after Spain after 3 weeks, we have had our UK reg car there since September 2015 and spend around 3 to 4 months a year there September to May, just down the road from where we have our house on the way to Alicante airport we were stopped, this is the first time we have been stopped in our UK car.
The Guardia officer asked we're we going and the other was playing with a mobile phone type device, after 2 minutes or so the officer on the "phone" said all was ok and on our way we went. I don't know for sure but i suspect they were checking the UK mot, tax etc.
If so this is good to see, I'm guessing they have seen the car about/parked around our area and were just checking, if people are running around on UK plates without MOT and tax there's a chance they won't bother with any insurance so they should be taken off the road, the more checks the better.

Are there any other British based companies like Saga who offer unlimited EU insurance?

I doubt you would be able to buy a serviceable Golf here for 500 euros. Might be proven wrong.
Why not have a UK RHD van that cannot be re registered due to the visibility issue I think? Loophole? Just keep it taxed and MOTd and insured.

It's not a loophole. Since it cannot be matriculated in Spain it must be removed or impounded.
That said, there are thousands of white rhd vans around.
