1) For my ACS references, my HR department were happy for me to write all the techie information myself. I just forwarded it to them, and they added all the other stuff (hours worked, salary, etc..)...

Assuming you went out on a standard ETA visa, I don't think it matters. On my online 175 application, I just listed the type of visa as 'Tourist', and left the number blank.

Yes, that should be OK - it makes sense to put related documents together in a single PDF (for example, as proof of work experience, I scanned several payslips into a single PDF)

It's nothing to worry about - the status won't change until a Case Officer is assigned to your application, and starts processing it.

It's difficult to judge whether you'll pass the assessment without knowing full details of your qualifications and employment history (and whether you're applying under Group A or B, etc..)

The ACS assessment should take 10-12 weeks, plus you've got to allow a couple of weeks for the results to reach you after they've posted them.
