I believe they can send you a Cheque in GBP which you can take to your bank and deposit and have converted into US dollars.
There are Lloyd's and Barclays banks in the USA that maybe able to help...

I agree with the flexible dates, I had a friend pass away December 24th 2017 and the funeral was just last week February 8th as you can see winter months within holiday periods are very extended.

If it is just over the weight limit and your not sure you can always add a regular USA forever stamp which is cheaper then doubling up on the forever overseas stamp.

but when I do I will follow your lead and apply online and then have a telephone interview, seems a good way to go...
