The quality of airplane food is a lot better than it used to be - no joke.
I've been flying regularly all my life and the trend was 1980s-decent food with real cutlery - 1990s crap food with plastic cutlery - 2000s - slowly getting better food.
Emirates has good food. Air Austria was surprisingly good. British Air is mediocre. The American airlines are awful. Air France is good. Lufthansa is pretty decent. KML is unremarkable.

I'm on the 2am tonight, why anyone needs to eat on a night flight amazes me.

It IS remarkable. Remarkable in that I've been offered the same meal on the AMS AUH leg for the last year--tasteless green beans, tasteless white rice, some sort of meat in a sauce, and I tried once the quiche they offer before landing--really soggy, no cutlery, and a taste that stays with you for days.
Trouble is, that's a day flight and I leave home at 4:30 am, maybe have a nibble at the sandwich on LBA to AMS, not enough time in AMS to grab anything, so I'm bloody starving by the time the big bird takes off. Last time smuggled some boiled eggs and nuts through security.
Maybe protein bars are the way to go.
