Not true. Some airlines may prefer to handle the luggage with their own
staff, others prefer to pay for the airport service.

In what way is it in airlines interest to do so?

Costs.
Take Air Canada as an example. In Toronto, they have lots of flights
and it is cheaper for them to have their own luggage and ground handling
service (which they can resell to partner airlines and make money). But
in Sydney Australia, where they have just one flight per day, they can't
justify having their own ground staff so they contract with ground
handling companies to take care of their flight.
There are companies that specialise in ground handling at airports. They
vary by continent. Airport actually rarely provide the ground handling
service, but they do charge for use of luggage belts and luggage sorting.
So airline pays airport to use the luggage belts, then pay some ground
handling company to bring luggage from the make-up room to the aircraft
(as well as refueling, towing, cleaning, catering etc etc).
Many airlines used to have their own catering operations and have since
spun that off and outsourced their catering (BA at Heathrow being a good example).
And example of ground handling company is Globe Ground
(http://www.globeground.com ) They purchased in 1999 one of the most
omnipresent ground handling companmy in north america : Hudson General.
They are also known as Servisair.

Perhaps the airlines might save some money by handling
luggage themselves? This is only a guess on my part.

Yes that's obviously one reason. Security is another and AFAIK El Al
always prefer to handle the luggage themselves as long as possible.
Quality may be another reason if talking about bad organized airports.

Maybe they can't justify flying there at all?

But yet they do, which means they apparently CAN justify flying there.
However, for a single flight daily it's not worth keeping baggage
handling staff on-site.
