As far as I know, NZ documents citizenship as part of the birth registration process, so you have to find out quickly if you are PR or not. Delayed birth registration causes a lot of problems later in life.
Also, if you are PRs, you need stamps in your passports as proof of status. Your son will need a New Zealand passport.

The status just says "APPROVED". I can't find any further info other than that on their website and we've heard nothing from them in the post at all.
However our case office was aware that we were back in the UK at the beginning of May and was holding on to some documentation for us with the intention of returning them to us once we'd returned to NZ. I simply forgot to let her know that we were back! I wonder therefore if she's held on to everything/anything else too?
I've emailed her tonight to advise that we're back (and apologise for the delay in me doing so) and asked for clarification on the current status of our PR application.
Though I'm of the belief that we've got a Migrant Levy to pay at some point as part of the PR application and we haven't done this yet so I'm guessing even if the status has changed to "approved" we'll not be "residents" until we've paid?!

If you became permanent residents on May 23 (not just approval in principle, but actual acquisition of status), and he was born on May 29, then he is a New Zealand citizen.
