I must be getting sentimental in my old age, this made my eyes well up.

Rather looking forward to it!

Not traditional but better than no mince pies.

After a bit of investigating and triangulation of recipes, I think I'll buy some pie pastry for the bottom cups and put the puff pastry on top.

That's it, now I have to make pastry, just the normal easy flour, lard, pinch of salt, ice cold water, vinegar and an egg. I'll make some sausage rolls, or rather I'll probably prepare all the stuff and make them tomorrow.
20 minutes later pastry is in the fridge and the sausages are almost ready. Tomorrow I can take it all out of the fridge and prepare them pretty fast, or even roll them up tonight and pop them in the oven tomorrow after work. If I take them to the club I will be a big hero, man of the hour.

Last edited by caretaker; Dec 19th 2017 at 10:04 pm. Reason: forgot about the egg and vinegar, it makes a difference

I think it's time you changed your name. It's not a huge change in the letters but Caterer seems more appropriate.

Do what I do (cause I can't be arsed to make pastry) - buy twice as many pie shells and use half for the top half - you have to squidge them down a bit and crimp the edges together, but they turn out great!

When I've done them I just used the cups and left them open.

Yeah, min spies don't need a top.
I made my own mincemeat thus year. Very yummy it is too. I'm going to try making a mincemeat upside down cake, it has possibilities. Also you can use bead instead of pastry, I t works

They're half done. I think I'll put cut out stars from the puff pastry and put those on top.
