Only slightly off topic, but with regard to the moose hunting that has just presently closed here, as it was for three days....are there authorised game butchers where it is possible to buy the meat of legally hunted animals. I ask as my OH was saying that he really liked the taste of Moose, and I have never tasted it, but wouldn't mind attempting something with a kilo or two. 3,556 moose were killed in NB (yes, I just read the paper) so where do they all go?

Hunting is not all about the trophy - it's about putting food in the freezer. All the butchers I know will take in game so in context of what you are trying to say is that they are all 'registered'!!!
So the short answer is most if not nearly all moose end up in the freezer of the bloke (or woman) that shot it!
I don't know this for sure and am only guessing, but unless the butcher is proccessing meat from moose reared specifically for slaughter, then he wouldn't be able to sell it because you can't be sure what a wild animal has eaten etc etc. There was a big ring arrested in your neck of the woods last year / this year???? for selling illegal moose meat. Natives don't need tags / licenses, so apparently they were shooting and then illegally selling them.
Just checked on all the game in our freezer (moose / elk / deer / beef) and it all says 'not for resale'.
I wholeheartedly agree with your hubby. Moose is one of the best meats out there IMO, richer flavour than beef, try looking at your local meat market - or even call a butcher to see if he knows of anywhere

Failing that, fly out to Alberta - i'll cook you some

Specialty meat shops like M&M sell Elk and Roe Deer meat that's been raised on game farms, but I haven't heard of domestic moose meat. Mandymoochops is right, buying or selling game taken by hunting is considered trafficking in wildlife. Your best bet, MillieF, may be waiting until the neighbour shoots a moose then look really wistfull.

Is Caribou the same? It's just that I had some in a restaurant in Quebec. Is the law on selling it different there or maybe it's allowed in a restaurant?

I don't recall a ring, but there have been periodic cases of an individual being done for having it. In fact there was a big row as some bloke was locked up and I don't think he had that much.

I've never tried Caribou - though from speaking to family members that have been on guided hunts they tend to leave the meat with their native guides.

It's possible someone is raising caribou domestically, or maybe some First Nations have a permit to harvest X number from whatever herd for sale, (as they do with some fish), though I doubt it as caribou numbers are tracked closely to gauge environmental impact of resource development. Likely someone has a reindeer farm because whatever the source the meat has to get inspected to go to a restaurant. I have a friend in Yellowknife who eats a lot of caribou (and musk-ox, and Arctic char), and he says it's very good.
