That sounded good, so this morning we've had corn cakes, chopped tomatoes (not enough ingredients to make a proper salsa), jalapeños and refried beans, all topped off with a fried egg. And rather good it was, too.

I spiced and braised a pork tenderloin this morning and had a hot pork sandwich on rye with gravy and chips and a beer. What? I didn't make any stupid resolutions.

More pork goes down, I had the Mexican breakfast sandwich on toast, thinly sliced pork with green onion, cilantro, jalapeno, sauteed with a blast of sriracha and topped with melted cheese and a scrambled egg, salsa verde.

Half an avocado with an egg yolk in the space where the pit was removed, some bacon and baked for 20 minutes or so at 350 F. Very nice.

I on the other and hand sit smugly knowing that the afternoon spent in the office yesterday will allow for a leisurely breakfast of egg, sausage and beans with a nice mug of tea while listening to the hilarious bucolic antics of The Archers.

Re: Breakfast Choices

local deli has Pancetta on special $0.99/100g (fresh really white fat on it) lean it was - not pre-packaged, slice it as you like it

Had them slice 10 slices on the number 3 thickness to represent Danish/English style bacon, total cost $1.89.

For me & the missus I fried 3 slices each in some left over pork fat that I keep in the fridge - closest in taste to the real back home thing. Side of fried tomatoes in the fat the pancetta was in, slice of home made potato bread...yum

I like bacon sandwiches with proper bacon and lashings of brown sauce, not the desiccated strips of fat North Americans call bacon.

has anyone tried Pancetta as an alternate to (so called) "proper bacon"?

I've used in cooking but as our local market has proper English, Irish and Danish bacon, the few times a year I eat it, I only buy one of those types.

I had this for the first time last week. Very good combo. Although it did cost £9 which I thought was a bit steep.

Today was homemade brek of egg on wholemeal toast, two slices of proper bacon, and a slice of Edam.

Strawberries and Greek yoghurt with an accompanied piece of cardboard with some almond mush on it while dreaming of eggs, bacon, sausage, chips, beans, fried tomato, mushrooms, fried bread, toast and a mug of tea. :(

Still, if I want to get into my sexy bathing suit this summer compromises have to be made. :)

Oh for a proper rasher.

Last weekend
Saturday: Croissants and berry fruits with slices of brie cheese.
Sunday: Pancakes

I'm rather stuck on poached egg with spinach and mushrooms at the moment, all on piece of quality toasted bread. Would be with a rasher but they are ugh here.
