If your house was empty and free for you to live in, the council tax must have been in your name for a start, plus all utilities.

The flat was rented and we arranged for the tenancy to come to an end a few weeks before our anticipated date of arrival. If the visa had not been granted, we would have just rented it out again.

A council tax or utilities bill in your name does not prove ownership of the property - tenants get these bills in their name too. So if all you'd sent was a council tax or utility bill in your name, you'd have had to get a letter of permission from the owner saying you were permitted to stay there, or a copy of your lease agreement - you'd be writing to yourself and replying

Thanks for all the information. When we move to the UK, we'll be staying with my parents for 6 months or so. They've paid off their mortgage and own the house outright. I will be submitting the land registry document alongside council tax and utility bills, just covering all bases.

Thats what I did. The land registry shows my parents own the house outright and there is no other third person that needed to provide permission for us to live there.
I also added an inspection report to my documents, not sure if it was needed but wanted to prove it was not overcrowded.
