A bit late as you've made your decision but I think it's the right one. Break up the journey AND the jetlag a bit.
Just a word of warning about Sentosa - it's a building site. Singapore is always a building site but at the moment they're building two integrated resorts (i.e., casinos with rooms) and I'm told Sentosa is a mess.
As is the Marina Bay area.

Just been to Sentosa this morning. Very crowded (National Day).
There's certainly a couple of huge building sites to go past on the train, but when you get there the beach etc is fine. My son is 2.5 and LOVES the train ride (from Vivo City shopping centre) and we do it two or three times a week (as it's $3 for me and he's free). He also loved the cable car ride the time we did it, and there's a vertical ride at the other end with good views. Trapizza's pizza is good for kids as they've a few climbing things there, and it's close to Underwater World (another of his favourites). You did say you had a 2 year old, can't remember now?

We stopped in Singapore last year on our way here. Booked through Singapore air and got 2 days at the Ritz (amazing hotel) for $40 for both of us and upgraded on arrival to a suite with free drinks and snaks in a special lounge for suite occupants for an extra $20. The airline throughs in free transfers between the airport and hotel and tickets to different things in the city. They have a range of hotels available

Hi Everyone,
We got our visas in July and are looking at booking flights to Sydney in March. The plan is to go with Singapore Airlines and get the extra baggage allowance, but we are unsure whether to have a stopover for a couple of days in Singapore, or plough straight through to Sydney.
We will be travelling with two kids, aged 2 & 5, 150kg+ of luggage and a push chair! Just wondering what peoples experiences are of travelling with young children, and whether anybody has used the baggage storage company at Changi airport, Porter Xpress? They offer to store bags for s$6 each per 24hr period. Seems to be a good service but would be interested in experiences of anybody that has used them.

We're always a bit wary of recommendations from first time posters, Warren - you never know if they've just googled for their company name. 
I missed that question first time, OP - yes, we used PorterXpress last year. We had them pick up our cases from our hotel after we'd checked out, went off to enjoy ourselves, and then picked them up at the airport in the evening. I believe I recommended them when I got back.
Probably use them again in a couple of weeks as we have a stopover in Sg and then a midnight flight.
Got a 9 hour layover in Changi this coming Saturday, actually, due to changing our flights to save 2.5k. Can't be fussed to go out so might try the transit hotel for a few hours, get a massage, etc.
