How are you coming to the US? I came on a K1 which meant I had to wait approx 3 months for my EAD. I was lucky that I landed the first job I applied for, but it was before my EAD had arrived, and it wasn't long before I was getting hassled to start work. Luckily, the EAD arrived about 4 weeks after the interview, and my company were prepared to wait. If those are your sort of circumstances, then voluntary work is a very good idea as it gets you some sort of experience over here and always looks good on the resume.
