Hawaii. Well at least it's direct for me and seemingly everyone I know in OR goes there between Jan-Feb to get away from the Mizzle, Gray and cold of the PNW.

The Grand Canyon, Oak Creek Canyon, Sedona in Arizona. February would be beautiful in all those places. Chilly, maybe a bit of snow at the Grand Canyon, but overall mild.
You could drive down through Phoenix, see some museums here, and then keep on going to Tucson...the scenery is totally different in Southern AZ compared to northern AZ. Lots of touristy/historical things to see and do in Tucson.

I would definitely consider the parks in Utah, though I do know it can be cold at that time.
New Orleans sounds fun too!

Thanks everyone for the suggestions. We had a serious look at New Orleans, but decided that it wasn't a particularly kid friendly holiday. We also seriously looked at Charleston/Savannah and although it sounds very pretty, didn't think there was enough to do to keep us busy for a week (there's only so many houses we can look at.)
Really liked the sound of Arizona parks, but flights were crazy expensive, especially as no-one I have miles with flies to the airports we needed. Plus I planned a couple of routes and we were looking at driving 900ish miles, and frankly I can't be bothered.

So basically we took the easy and cheap option and in the tradition of true English folk we decided to go to Orlando
Although, I promise not to want to move there after our trip.
