When I first got my K1 visa from London back in 1998 I had to get the MMR vacinations
etc. It wasn't mandatory to get the visa but was supposedly required at a later date.
I decided to get it over an done with at the US Doc's office.
Now over 3 years later I've never needed to give any proof of having these
vacinations. Has anyone ever had to show their vacination reports? If so, when???

Only at the time of AOS. Since your AOS was super fast, it wasn't a requirement that you supply INS with the supplementary vaccination report.
Forget about it. If anything when and if you decide to become a citizen you MIGHT need it at that time although I strongly doubt it.

I was required to submit a Supplementary Vaccination certificate to file the i-485
papers in Salt Lake City. This is despite the fact that I had had the complete
immigration physical a mere 2 months before.
