Sadly the local that did cheddar poutine closed down, there is another place that does chilli fries, it is even better than onion gravy. At home just ketchup, but I never have fries at home anymore.

Usually mayo, or buffalo sauce if I go to McDonalds.
If we were in England, red sauce, salt & vinegar. Unless mushy peas are available then the red sauce isn't necessary

And when i worked in a burger join i'd take a couple of fries wrap them in a slice of burger cheese and then dip the roll in mayo. I put on some weight in that job.
No double dipping.
Fish and chips (proper chips) is salad cream for me.

Ketchup and mayo at the same time? mixed together you're half way to having a prawn cocktail sauce. Which i wouldn't choose for fries personally.
