Many many possibilities but if the ingredients are available I prefer a mix of..

Malt vinegar, mustard, a little catsup, salt and pepper.

Washed down with an ale naturally.

Proper chips: Nothing just salt and vinegar, unless i'm feeling decadent, the i get the gravy out!

Ketchup and mayo....if they're home made chips, splash of malt vinegar. Sometimes make curry sauce though.

The missus uses bbq sauce and one of the kids uses ranch dressing.
