No you can get them skinless as well. There are so many recipes out there for it though. You haven't hit on the right one. Some are skinless and then coated with batter to give it a nice crispy shell. Then you take a batch and put them in a bowl with sauce. You have to get the right size wing. The bad variety will be really small as well as being too large. You have to find the right size cut for it. There are well over 30 flavors for them as well. The dressing is meant to add a flavor punch and to cut the heat down.
