Since you sound like the true apple pie fan - my fiance (Keith) tells me apple pies are entirely different in the UK. Have you figured out what apples cook up anything like the Bramley? I'm trying to keep him from getting too homesick once he comes over.

We once ruined a vegetarian's next 10 meals (at least) by telling her jello (your jelly) came from pigs feet. I think it does actually.

Nope sorry...there's nothing to replace the good old English Bramley cooking apple.

I've not made a single apple-pie since moving here. Simply not worth the effort without Bramleys.

Kind of ironic, seeing that 'they' think they've invented apple-pie...

Oh dear, well I'll have to compensate with other pies I guess. I have to laugh, I love to cook- but every time I tangle with a UK recipe, it takes me 10 tries! And they aren't even complicated. Oh well, I usually win in the end. I have been converted to the wonders of scones, sunday roast dinner, clootie dumpling, etc.

Thanks anyway - maybe I should plant a tree?

starts with a "c" - Cortland? Criterion?

Guess I'll have to ask sweetie to bring me apple seeds for my birthday - didn't someone say the best way was the used underwear bag? Long wait for a pie though.

Eating apples are not the same as Bramley cooking apples. Bramley's are extremely tart...you can't eat them raw without a sweetner. They have a high acid/low sugar content which helps retain the apple flavour when cooked...something which is lost with an eating apple. They have a unique texture when cooked.

They sound kind of like the old-fashioned greening apples, which I can't find anymore. Granny Smith have any similarity?

And I read, Bramley's cook up fluffy - can't think of anything that does that. I'm surprised they don't seem to exist over here.

The colour is the only similarity. Bramley's tend to be darker green, irregular shape and quite large...some the size of a grapefruit. You are correct about the texture...they don't go mushy when cooked like eating apples do. They don't need to be pre-cooked before putting in a pie, crumble etc...but they do need sweetening.

Well guess I'll have to experiment. Granny Smith, Rome Beauty, Macintosh etc. bake up well (for American style pie anyway). I wouldn't say they're mushy, but not fluffy either. Thanks.

I think we've activated your addiction

Crust on the bottom makes it a pie I think - apple crumble in a crust.

I could go on about the types of apple pies I HAVE made - French - with orange flavour and the apples stewed first, basic old 'merican - lattice top, nice apples with brown sugar and cinnamon under flaky lightly browned crust, and of course, yes, apple crumb topped.

Are you running out to the store yet?
