I don't know what it's like where you are, but panaderias seem to be the most popular new businesses to open around here, I can't believe how many new ones have opened up over the last 12 months or so. Some are new branches of established businesses, others completely new. Maybe they think everybody will be comfort eating and stuffing their faces with cake to console themselves about their job prospects! The good thing is, though, that bakers are one kind of Spanish shop who are nearly all open on Sundays. We even have one where you can buy, fresh bread 24/7 - if you go when the shop is closed there is a hatch in the wall where you can ring, pass your money over and get your bread.
I think to find one I will have to probably venture into another town, which is no bad thing, the difference I have to adjust too is I used to in UK buy my Bread the night before and It was still fresh for the morning, they usually shut here or run out quite early. I just need to adjust, I would like a poppy seeded / black seeded stick.

I think its more the case of panaderias being fairly easy to set up

And people know that if you do nice bread and other pastries then it probably will be a success as everyone can afford the odd euro here and there

Yes, I've noticed a lot of new bread and cake shops opening up. Some are expensive chain operations like le pain quotidien (originally from Belgium I believe, and have outlets in London too), others are more on the fancy cake side. There's a Portuguese place near Plza Callao that sells their Nata cakes amongst other things - but they are not cheap. I've mentioned before that a good bread shop should always do well if the quality is there - I always notice the good panaderias in Madrid have a daily queue outside, whereas those that sell mediocre bread rarely do. However it does seem to have a high risk start-up factor - if your product doesn't sell on the day you end up chucking your goods away. You really have to get the marketing and quality control 100% from day one.
