I first saw that being used almost 50 years ago in the Mattesson Meats factory in London, where they were making "Honey Roasted Ham" from scrappy cuts from the pork shoulders.
It's certainly not new and there is no reason to think it is harmful to eat such products.
It's probably used for fish products as well.
