I order carrillera (or galtas in Catalan) quite often

It is delicious, I've never had a bad one. There should be fat, but not that much. They are pretty much just a variation of carne guisada, which is my favourite winter dish, and so tasty and cheap that it is silly

Rabo de toro is also very nice, but here the quality varies a lot. I've had some delicious and horrible versions. The bad versions typically have too much fat and not enough meat

I've had manitas de cerdo once in a good restaurant, they were nice, but a bit geletinous

Tocino is for eating in stews, dread the thought of eating it raw!

Well a bit of good fat is essential to give meat some taste. I've had wonderful rabo de toro where there has been plenty of meat and the fat is melting and not too gelatinous. I think a lot of it is to do with what you are brought up eating. When I lived in Scotland I saw tourists in restaurants who didn't know what to do with a prawn in its shell. One restaurant always put a hugh languostine on the side of a number of its seafood dishes and no end of people used to leave them untouched. Needless to say they weren't spanish tourists.

If you like English pork pies, then you'll probably have eaten pigs trotters. They are rich in gelatine when cooked & also make fantastic stock for gravy. I attempted to make a game pie recently & got 2 pigs trotters for the jelly. Very rich.

I haven't had a game pie since leaving England.....I'm salivating at the very though of one!

Put a couple in a beef stew and see the difference they make to the gravy
