Good luck with your dream but before leaving the UK please absolutely make sure you have the approval of your mortgage company to rent it out? Maybe your existing mortgage does not have such a provision - as in buy to let? Then from HMRC authority to your letting agent (I am presuming you will not do the letting on a one to one basis from Spain?) to pay the rental gross? The agents might take 10% plus vat for a managed service so that will eat into the difference between the mortgage and gross income.

Not sure if you have found any sites for this but try: owners direct, AirBNB, homeaway. These are generally holiday lets but some do offer longer term rents. Or even try A place in the sun website.
You may also want to try: Inland Andalucia, Kyero, or any other "estate agent". They are mostly for buying a house, but again, they do have some long-term rental properties. Failing that type in "Inmobilarias in Costa del sol" e.g into your web browser and loads of other agents will appear.
