Possibly this is your missing documentation. I had to look it up and I think this will help: www.apostille.org.uk

Meant to add, the cost is only 59.79 GBP + VAT, and according to the website Spain will accept the Apostille Certificate in place of any further legalisation
Have already done this, all it did was make the probate recognizable in Spain, unfortunately it still states that spain is not covered by the probate. Cheers for trying to help any way!

I don't know if this is relevant, or will help, but when my OH's previous wife died intestate he had the same rigmarole to contend with in Portugal, whose inheritance laws are the same.

The resolution involved the British solicitors having to liaise with the British Embassy in Lisbon to provide the necessary documents for the Portugese.

I wonder, therefore, whether the British Embassy in Madrid could advise you and, hopefully, be involved to bring about a solution for you. Worth a try?
